Happy Friday all! I’m getting sort of close to the end of my time in Miami, which is making me sad for all the things I haven’t had a chance to do yet…all the food I haven’t eaten, all the hashes I haven’t been on, all the beaches I haven’t seen. Which would be all of the beaches, because I’ve been to no beaches. I know. It’s embarrassing. Let’s move on. IT’S NATIONAL DONUT DAY!

I’ve got a recipe for you today!
I don’t know why but the last two weeks have really dragged me down. I’ve been struggling to stay atop of my overly ambitious schedule (I believe I’ve mentioned it before, see my MO for more details), and got behind one day about two weeks ago and just haven’t been able to catch up. Healthy cookies! Kind of an oxymoron, right? WRONG! Ha, gotcha.
I’ve been on the lookout for a healthy breakfast cookie for ages (I hate mornings, more-or-less, and I’m always hungry and looking for something quick to eat), and haven’t had time to experiment since my initial, disastrous foray into the breakfast cookie world (unclear what went wrong but I think it was the buckwheat flour – we have since parted ways. I was trying to limit the amount of oats I used, since I usually have oatmeal for breakfast anyways, but then came to the realization that I probably don’t eat enough oatmeal to say no to an oaty breakfast cookie. I received a lot of really unexpected – but very much welcomed – support of my post last week. Whether it was friends liking my post (even though I know not all of them read it, I still appreciate it!), to encouragement of maintaining my blog my way, to messages from friends close by and far away agreeing or commenting or challenging me, it’s so nice to have the support/inspiration/confidence and really motivation. Even though I really truly am going to blog for myself, it just makes us human that we seek and glow from the attention and caring from our peers. So, consider me human ☺️.
